Chocolate Dipped Banana Bites

 

Welcome to summer everyone! If you are located in Texas, you may already know that the summer weather begins in late spring. However, this year with all of the rain we’ve received, the temperatures have been mild. Hallelujah! This month, I wanted to bring you a fun kid friendly recipe and my first dessert recipe in the Simple Plates series. These chocolate dipped banana bites are meant to satisfy that ice cream craving while adding a touch of fun flavor for more sophisticated palettes. Did I mention that they are vegan friendly? Keep reading to learn how to make this fun summer treat.

Ingredients

(Serves 3-5 )

  • 3 Large Bananas
  • 1/2  cup of dark chocolate chips
  • 2 Tbsp. Coconut Smiles or Coconut Shavings
  • 1 Tbsp of Cayenne Pepper
  • 1 Tbsp. of crushed pistachios

 

Health Facts: Besides being loaded with potassium, bananas offer up a hefty serving of 3 grams of fiber per banana. This has positive effects on your bowels, blood pressure, and cholesterol.

Preparation Instructions:

Peel bananas and slice into two centimeter thick medallions (see photos). Ideally, you should have 6 – 8 slices per banana. Place to the side.

On a plate, create separate piles of the the following ingredients: crushed/blended pistachios, cayenne pepper, and crushed/blended coconut.

Pour the dark chocolate chips into a microwave safe bowl, I really like these pretty bowls. Microwave chocolate chips until they are thoroughly melted, mix until there’s smooth consistency.

Now that you have all of your ingredients laid out in an orderly fashion, create an assembly line. Wax paper comes in handy when placing the finished bananas. Try placing a sheet on top of a ceramic plate. Take a banana slice, dip one flat side of the banana into the melted chocolate making sure the chocolate sticks to the banana. The entire side should be covered. Then, immediately dip the chocolate side of the banana in the topping of your choice. If you are making this recipe with kids, they may enjoy more kid friendly toppings such as colored sprinkles, or chocolate Rice Krispies. Don’t be afraid to have fun and be creative.

Once you have dipped and topped place the banana with the chocolate side up on the wax paper and repeat with all of the banana slices. You have the option to place toothpicks into the banana slices to make them easier to eat later. Place the plate with your banana slices in the freezer for about 1 hour or until completely frozen.

Lastly, take the bananas from the freezer and enjoy!
