Fantastic Vegetarian BBQ Sliders
One of the hardest things about eating a healthier diet is giving up classic foods that you once indulged in regularly. But part of the reason why I create recipes is to provide a dose of normalcy to your new healthy diet. One food I truly miss since switching to a vegetarian diet is BBQ. Though I did not eat BBQ often, it’s still hard for me to resist that craving for a good brisket sandwich or BBQ slider. And living in Texas doesn’t make this any easier. This BBQ Slider recipe is the easiest comfort food snack to make and it’s vegetarian-friendly. Yep! No cows or pigs were harmed in the making of these meat-free sandwiches. Enjoy!

Cooking Instructions:
In a heated frying pan, heat two tablespoons of coconut oil until fully heated. Add chopped sweet onion and cook until tender and translucent (cover with lid). Add in chopped red cabbage, stir, and cover with lid. Cook until cabbage is tender.
In a separate skillet, melt butter until it runs smooth. Cut open sweet rolls (hamburger style). Place the top and bottom buns face down on the skillet and cook until golden with brown edges (about 1 minute for each bun).
Remove buns from the skillet and add the entire package of bbq jackfruit. Cook and stir until it has been fully heated (about 10 minutes).
